An alternative to french fries...
By G-Ma Johnson
Well by now you must have figured out I watch the foodnetwork.com shows plus the fact I like to cook. Cooking for one was really difficult for me to adjust to. After so many years with children, then with a man I loved with my heart and soul for 33 years, left me for a younger woman. Suddenly I had to change my eating habits and my cooking.
I eat healthy food , all organic, lot's of greens, fruits, vegies and seeds, but I love meat, chicken and fish. Anyway I saw another cool recipe for potato's. You may want to use them in the morning for breakfast, for lunch with a burger as well at dinner. You can also make a salad with these.
OK... OK... I know just give us the recipe.
You need small potato's, white ,red, or the new purple. I found a bag of them mixed so that made it really easy.:O)
Boil Potato's
Boil the potato's in a pot. (I always boil extra so I have them on the ready anytime I want some)
Cooling
gently now
B... Place how ever many you want to eat on a cutting board, or the counter and gently press each one with the palm of your hand so they give and are split on the ends. (see photo)
new cooking oil
C... Heat your pan up with whatever oil you like.
( have found a new oil, Coconut oil, cooks at a high temp., has no bad stuff in it , however, if you use too much it will change the flavor of what you are cooking, but sometimes it is a good thing, like with shrimp...:O))
ready to cook
D... Place your potato's in the pan ( I add some sea salt ) and pepper.
Let's eat
E... Cook till you think you should turn them over and brown the other side. The crispier you want them the longer you fry them. They will be nice and brown, ready to plate and enjoy.
Ketchup, any sauce you like goes good with them, just like a french fry, just a bit different. I hope you try them and enjoy them...
New things are always fun ! ! !
Bon Appetite..:O) Hugs G-Ma

I just picked up some coconut oil today and am so glad I read your hub. We have switched to eating healthy, organic foods over the past two years and are seeing good results. This is way better than french fries that cause hardening of arteries.
