Compound Buttered Chicken Breast

Another food network show recipe...love this station. Again this is not exact but is very tasty and easy to adjust to your personal taste.
I use the best meats I can buy, usually organic and this chicken breast has the skin on it because you will be stuffing the butter between the skin and meat...:O)
4 chicken breast half's
2 sticks of room temp. butter (save 2 tbls. of plain butter for later) 1/2 of this butterĀ compound butter was used in this recipe.
1 package of blue cheese ( you can use any kind you like actually)
4 slices of bacon cooked, cooled then chopped.
1 bunch of fresh chives (again you can use any greens you like, basil, green peppers, onions, garlic )
A compound butter is simply butter mixed with other flavors mentioned above and you can use it on all kinds of meats.
Ok now mash all the ingredients together into the butter. I saved 1/2 for later in the refrig. and you can always give some as a gift in a nice container. Keep refrigerated though.
Just use your finger to pull the skin away from the chicken breast and stuff the compound butter under the skin and on top of the meatie part. Press the compound butter by rubbing the skin to fill the area under the skin (lengthwise).
Put the plain butter you saved (right? you did save some?) on top of the skin and add some pepper. No salt though because the blue cheese and bacon are salty.
Oven set at 425 F. and place the chicken breast on a cookie sheet and bake for 30-35 minutes until crispy...golden browned...serve with a tasty salad and maybe a vegie...Enjoy...:O) Hugs G-Ma

OK Paula , 2 sticks of butter:-P? This sounds good Merle Ann, I always use butter and spices (and garlic) but never though about infusing stuff into the butter. I like that idea. Peace and Love!! Tom
Sounds great G-Ma, chook with cheese garlic and the works sounds my kind of food.
I had to google 2 sticks of butter - 1/2lb, wow! With the other stuff that's about 1lb of goo to go under the bird's bra. I know things are big down South but your chooks must be the size of emus.
