By

Well this is the one I have anyway...:o)

1- 9 in.unbaked pie crust

1 tbslp. softened butter or margarine

2 1/2 cups milk

1/2 cup sugar

3 eggs

1 tsp.vanilla extract

1/2 tsp. salt

1/4 tsp. ground nutmeg

Whipped Cream for topping

1. Prepare pie crust. Rub unbaked crust with softened butter or margarine, refrigerate. Prepare oven to 425 degrees.

* *Before pouring in the milk mixture sprinkle 1/2 cup coconut, either flaked or shredded over bottom of pie crust.

2. In medium bowl with wire whisk or hand mixer, beat remaining ingredients. except garnish (whipped cream)

3. Place pie pan on oven rack and pour milk mixture into piecrust.

4. Bake 20 - 25 minutes until knife inserted, about 1 inch from edge comes out clean. Cool

5. Garnish cooled pie with whipped cream and enjoy . note...you can also toast some coconut and speinkle on top of whipped cream..or fold some flaked into the whipped cream.

I also answered the same request. Though I am definitely sure that your recipe is much better tasting because its yours. A truly old-fashioned coconut cream pie recipe can only be authentic when they are family recipes. Thank you for sharing your personal treasure, G-Ma!

I had my first taste of coconut cream pie in a place called Oneonta in NYS 3 years ago. It was home made and to die for!. I think your ccp is the equivalent in America to the Pavlova or Lemon Merangue Pie in Australia. Yummmmm.

G-Ma, I want one! It's one of the few ways I actually like coconut. But I imagine yours is SO MUCH BETTER than mine!

I think my coconut trees are almost ready to harvest--maybe you can come over to my farm and make us one! :-)

Umm-mm, coconut cream is just my vice-favorite pie!. I'm wondering if a recipe would go well using canned coconut milk that I recently bought - almost afraid to try it...haven't had any for a while, and you've tempted me!

Thanks for sharing your recipe and your smiling hugs!
